Crispy Pork Belly
A mouthwatering roasted pork belly with a crackling crispiness in the outside and a melt in the mouth softness in the inside.
Crispy Pork Belly
Ingredients
- 5 lbs Slab of pork belly with skin on Available in oriental store or request this it from your grocery's butcher.
- 3 tbsp Coarse salt
Marinade
- 1 tbsp Black pepper
- 8 cloves Crushed garlic
- 1 medium Minced onions
- 1 bunch Green onions
- 3 stems Lemon grass
- 3 pcs Bay leaf
- 1 tbsp Fish sause (patis)
- 2 tbsp Soy sauce
- 1 tbsp Salt
- 1 pcs Lemon (juiced)
Instructions
- Clean the pork thoroughly by rubbing thoroughly with the meat with coarse salt. Rinse thoroughly and pat dry.
- Add all marinade ingredients and mix well. Rub it all over the meat and soak with skin on top (exposed) for at least 4 hours. I marinade it overnight in the refrigerator.
- With waterbath, bake using convection oven for 2 hours using 350 degrees Fahrenheit.
- Serve with your favorite barbeque sauce, Mang Tomas or your favorite concoction. Mine is a mix of vinegar, soy sauce, lemon juice, crushed garlic, minced onions, salt and pepper.
