Ube Bibingka

Just being obsessed with ube or purple yam lately, I created another variation of a classic royal bibingka making it into this appetizing purple yummy snack or breakfast.

Ube Royal Bibingka

Ingredients
  

Dry ingredients

  • 2 cups rice flour
  • 1/2 cup glutinous rice
  • 1 tbsp baking powder
  • 1 tsp salt

Other

  • 1/4 cup ube halaya
  • 1 cup granulated sugar
  • 3 large eggs
  • 2 cups coconut milk
  • 5 tbsp melted butter
  • 1 tsp ube extract

Instructions
 

  • Preheat the ooven to 350 deg Farenheit. Mix all in the dry ingredients list.
  • On a separate mixing bowl, beat eggs and sugart until light yellow. Add melted butter, ube halaya, ube extract and coconut milk, Blend well.
  • Add the dry ingedients mixture and mix until well blended.
  • Prepare the cake pan or a cast iron lined with banana leaves (optional).
  • Pour batter into the cake pan and top with sweetened coconut string. Bake for 10 minutes and top with cream cheese. Bake for 30 minutes more.
  • Remove from oven and topped with more cheese, as desired.
