Ube Bibingka

Just being obsessed with ube or purple yam lately, I created another variation of a classic royal bibingka making it into this appetizing purple yummy snack or breakfast.

Ube Royal Bibingka
Ingredients
Dry ingredients
- 2 cups rice flour
- 1/2 cup glutinous rice
- 1 tbsp baking powder
- 1 tsp salt
Other
- 1/4 cup ube halaya
- 1 cup granulated sugar
- 3 large eggs
- 2 cups coconut milk
- 5 tbsp melted butter
- 1 tsp ube extract
Instructions
- Preheat the ooven to 350 deg Farenheit. Mix all in the dry ingredients list.
- On a separate mixing bowl, beat eggs and sugart until light yellow. Add melted butter, ube halaya, ube extract and coconut milk, Blend well.
- Add the dry ingedients mixture and mix until well blended.
- Prepare the cake pan or a cast iron lined with banana leaves (optional).
- Pour batter into the cake pan and top with sweetened coconut string. Bake for 10 minutes and top with cream cheese. Bake for 30 minutes more.
- Remove from oven and topped with more cheese, as desired.
