Kare-kare

A classic favorite Filipino dish that I crave from time to time. One dish that is always part any special occasion and always requested on a potluck parties.

Kare-kare

Stewed oxtail meat with vegetables in peanut sauce.

Ingredients
  

  • 2.5 lbs Oxtail (I also use pork hocks as an alternate meat and use beef chuck for my picky eaters.)
  • 1.5 tsp Salt
  • 2 tbsp Olive oil
  • 5 cloves Crushed garlic
  • 1 medium Sliced onions
  • 1/2 cup Peanut butter (original)
  • 1/2 cup Roasted rice flour
  • 1/2 cup Achuete water (achuete seeds soaked in water)
  • 1/2 lbs Green Beans
  • 1 large Eggplant
  • 1/2 lbs Bokchoy
  • 1 pc Banana heart (Flower)

Instructions
 

  • Marinade oxtail with bay leaf, salt, vinegar and pepper for 30 minutes.  Drain from marinade.
  • Saute garlic and onions in olive oil. Add oxtail meat and cook until the meat is brown.  Add salt and enough water to cover.  Bring to a boil and simmer for about 1 1/2 hour.  Remove meat from the broth. (If using IP, set to SAUTE to saute as noted, then cancel and set to PRESSURE COOK to bring and simmer for 15 minutes, then do NPR for another 30 minutes.)
  • Wash and prepare the vegetables (green beans, eggplant, bokchoy and banana heart) and cut into a desired sizes, if desired.  Parboil in the broth for about 5 minutes using a deep steaming pan.  Remove and set aside. (Set back the IP setting to SAUTE for this step.)
  • Toast rice flour until brown.  Transfer the rice flour in a bowl and add achuete powder.  Cream the powder using cold water.
  • Add the creamed powder and peanut butter in the boiling broth.  Let it simmer for 3 minutes and add the meat.  Simmer for another 5 minutes. (IP setting to SAUTE for this step.)
  • Serve hot with shrimp paste, vegetables and plain rice.
