Suman sa Lihiya

Glutinous rice soaked and soften with water, salt and a few drops of lye water, wrapped in banana leaves and boiled in water. It’s a classic snack delicacy in the Philippines that I enjoyed as breakfast or snack. It’s simple and made with only 4 ingredients. The complicated part is to decide on what topping goes best with it. I like it with a simple caramelized condensed milk, but other use latik, coconut sugar and pair it with ripe mango.

Ingredients
  

  • 5 cups glutinous rice
  • 3 cups water
  • 1.5 tsp lye water
  • 1 tsp salt
  • Banana Leaves for wrapping

Toppings

  • condense milk

Instructions
 

  • Wash glutinous rice and soak it with water overnight. Add enough water to cover the rice. Drain excess water on the following morning.
  • The following morning, dissolve salt, lye and water together. Mix the soak rice and let it sit for one hour. The rice will turn yellowish. Wash lightly and drain.
  • Prepare banana leaves – 20 pieces of 8x6in for outer wrapper and 20 pieces of 4x6in for lining.
  • Use one outer wrapper and one lining to wrap about 2 spoonful scoop of rice, as shown in the picture. Set aside and make another one. Tie 2 pieces of wrapped rice together. Do the rest.
  • **Separately, you can also use mason jar to steam the rice if you do not have banana leaves. Add rice until half full and add water leaving few inches on top. Cover.
  • Fill the pan with water until fully submerged or water until 1/4 of the jars.
  • Cover pan and boil/steam for one hour. Remove from water and let it sit to cool down. Be careful as everything is so hot.
  • Serve with your favorite toppings.
