Fresh Tomato Salsa
Roma tomatoes make the best fresh tomato salsa. It’s a family favorite savory snack on summer time when there is abundance of fresh tomatoes from the garden. I tried couple of recipes and formed my own version and mix of ingredients.
Fresh Tomato Salsa
Ingredients
- 2 lbs Roma tomatoes Chose the red but not too ripe.
- 1/2 cups Thinly sliced yellow onions
- 1/4 cup Thinly sliced shallot
- 1/2 cup Chopped cilantro
- 1 Jalapeno (seeded)
- 4 cloves Garlic
- 1 pc Lime (juiced)
- 2 tbsp Apple cider vinegar
- 1 tbsp Sugar
- 2 tsp Salt
- 2 tsp Pepper flakes Optional and adjust based on your preference
- 1 tsp Ground pepper
- 1/2 tsp Ground cumin
Instructions
- Core tomatoes and cut into half for food processor. You can also manually slice into tiny cubes but I prefer food processor to get a better consistency.
- Process tomatoes and jalapeno in food processor. I prefer to manually slice the onions, shallot and garlic to make it consistently sliced very thinly.
- If you want a chunky salsa, combine all ingredient in a separate bowl and mix thoroughly. If you want a thinner version, add all ingredients in the food processor and make few pulses to combine until it reaches the consistency you desire.
- Serve with tortilla chips or preserve on a clean mason jar and refrigerate up to 2 weeks.
