IP Bread Pudding Flan

This is a nice variation to the regular Filipino leche flan. It has some density on it but it is as soft and smooth and it still melts in the mouth. Love it as breakfast, dessert or snack.

IP Bread Pudding Flan

Ingredients
  

Flan ingredients

  • 4 large eggs
  • 4 slices white bread remove the crusts
  • 1 can condense milk
  • 1 can evaporated milk
  • 1/2 cup fresh milk
  • 1 tsp lemon rind

Caramel

  • 1/2 cup sugar
  • 2 tbsp water

Instructions
 

Caramel

  • Mix sugar and water in a saucepan. Heat without stirring until golden brown.
  • Transfer to the cake pan, turn the pan to cover and spread evenly at the bottom and let it cool until it hardens.

Flan

  • Mix all flan ingredients in a blender. Let the mixture soak for at least 30 minutes or overnight.
  • Blend until smooth. Pour the mixture into the cake pan.
  • Add 2 cups of water in the IP pan. Set to "Steam" for 20 minutes. Do NPR for another 15 minutes. If no IP, water bath bake in the oven for 30 minutes at 350 deg F.
  • Cover and refrigerate for at least 2 hours before serving. Enjoy.

Notes

I like my caramel a little burn but you do it a little lighter as desired.
