Clean the pork thoroughly by rubbing thoroughly with the meat with coarse salt. Rinse thoroughly and pat dry.
Add all marinade ingredients and mix well. Rub it all over the meat and soak with skin on top (exposed) for at least 4 hours. I marinade it overnight in the refrigerator.
With waterbath, bake using convection oven for 2 hours using 350 degrees Fahrenheit.
Serve with your favorite barbeque sauce, Mang Tomas or your favorite concoction. Mine is a mix of vinegar, soy sauce, lemon juice, crushed garlic, minced onions, salt and pepper.
