Crispy Pork Belly

Ingredients
  

  • 5 lbs Slab of pork belly with skin on Available in oriental store or request this it from your grocery's butcher.
  • 3 tbsp Coarse salt
Marinade
  • 1 tbsp Black pepper
  • 8 cloves Crushed garlic
  • 1 medium Minced onions
  • 1 bunch Green onions
  • 3 stems Lemon grass
  • 3 pcs Bay leaf
  • 1 tbsp Fish sause (patis)
  • 2 tbsp Soy sauce
  • 1 tbsp Salt
  • 1 pcs Lemon (juiced)

Method
 

  1. Clean the pork thoroughly by rubbing thoroughly with the meat with coarse salt. Rinse thoroughly and pat dry.
  2. Add all marinade ingredients and mix well. Rub it all over the meat and soak with skin on top (exposed) for at least 4 hours. I marinade it overnight in the refrigerator.
  3. With waterbath, bake using convection oven for 2 hours using 350 degrees Fahrenheit.
  4. Serve with your favorite barbeque sauce, Mang Tomas or your favorite concoction. Mine is a mix of vinegar, soy sauce, lemon juice, crushed garlic, minced onions, salt and pepper.
