IP Rolled Sapin-sapin

Just a simple twist to the normal sapin-sapin. It’s made thinner than usual and rolled it as a twist. It’s made of one main base glutinous rice flour and milk. You can mix and match your favorite flavors and the most common ones are ube, pandan and langka. Since I do not have langka on hand, I used pumpkin (just in time for the fall season ahead of us).

Layered steamed rice cake with three flavorings.

Ingredients
  

Dry ingredients

  • 1 cup glutinous rice flour
  • 1/2 cup sugar
  • 1/2 tsp salt

Liquid Ingredients

  • 1 cup fresh milk
  • 1 cup coconut milk

Flavorings

  • 4 tbsp rice flour
  • 1/4 cup ube halaya
  • 1/4 cup mashed pumpkin
  • 1 tsp pandan flavor

Instructions
 

  • Prepare the IP with about 4 cups of water. Put the trivet and the cake pan brushed with coconut oil. Start preheating by starting with Saute setting to heat the water while preparing the mixture. While we all think that IP cook quickly, it takes time to pre-heat so this will cut that time.
  • On a large bowl, mix all dry ingredients. Add fresh milk and coconut milk. Mix until the mixture is smooth.
  • Divide the mixture into 3 equal parts. Transfer to 3 separate bowls.
  • For the first bowl add the ube halaya and mix well until smooth. Add to the cake pan.
  • Close the IP and move the setting to "STEAM". Start and this will take around 6 minutes cooking time. When done, QPR.
  • Meanwhile, prepare the second bowl by adding pandan and 3 tbsp. rice flour. Mix well until smooth.
  • Pour carefully to the steamed ube. Set the IP in steam again and start. QPR when done.
  • Prepare the next mixture by adding pumpkin and 1 tbsp rice flour. Mix until smooth.
  • Pour carefully to the steamed pandan mixture. Set the IP in steam again and start. QPR when done.
  • Let it cool and carefully roll the steamed pandan. Sprinkle with latik and serve.
