Shrimp Tacos
This is healthy version of tacos with a twist using a Cajun seasonings.
Shrimp Cajun Tacos
Ingredients
- 1 lb Shelled and deveined medium-size shrimp
- 2 cups Shredded salad greens Lettuce, red or green cabbage
- 1/2 cup Cilantro
- 1/4 cup Jullienne red pepper
- 1/4 cup Thinly sliced onions
- 1/2 cup Diced avocado
- 2 Jalapeno (grilled)
- 12 pcs Flour or corn tortilla
- Lime slices
Marinade Ingredients
- 1 tsp Salt
- 1 tsp Cajun seasoning
- 1 tsp Garlic Powder
- 1 tsp Onion powder
- 1 tsp Dried Oregano
- 1 tsp Black pepper
- 1 tsp Paprika
- 2 tbsp Olive oil
- 1 Lime
Roasted Cajun Corn Salad
- 2 cups Frozen corn
- 1/4 cup diced red pepper
- 1/4 cup Diced carrots
- 1/4 cup Diced red onions
- 1 tbsp Cajun seasoning
- 2 tbsp Butter (melted)
- 1 tsp Garlic powder
- Salt and pepper to taste
Topping sauce
- 1/2 cup Mayonaise
- 1 tbsp Sour cream
- 1 tbsp Sriracha sauce
- 1 tbsp Lime juice
- 1 tsp Sugar
- Salt and pepper to taste
Instructions
Cajun Shrimp
- Combine shrimp and marinade ingredients and let is set for at least an hour.
- Using a lightly oiled cast iron pan, heat and pan fry each side of the shrimp for 3-4 minutes. Do not overcook.
Roasted Cajun Corn Salad
- Make the Roasted Cajun Corn Salad. Set oven to 375 F. Combine all ingredients for the Roasted Cajun Corn Salad. Spread evenly of a cookie sheet pan. Bake for 15 minutes. Set aside.
Topping sauce
- Combine thoroughly mayonnaise, sour cream, sriracha sauce, lime juice, sugar, salt and pepper on a bowl.
Taco Assembly
- Lightly roast the tortilla on a heated cast iron.
- Fill generously with greens, pepper, onions, jalapeno, corn, shrimp and your the topping sauce. Sprinkle with cilantro. Squeeze in some lime juice as desired.

Notes
You can make the Roasted Cajun Corn Salad ahead. It is also good as side dish on barbecue dishes or fried fish fillet.
