Multi-layered, multi-flavored steamed rice cake

Ingredients
  

  • 3/4 cup Glutinous rice flour
  • 1/4 cup Sweet rice flour
  • 1/2 cup Sugar
  • 1 tsp Salt
  • 1 cup Coconut milk
  • 1/2 Cup Fresh milk

Flavorings (as you desire)

  • 1/4 cup Ube (crushed) or halayang ube
  • 1/4 cup Pandan water I use pandan extract diluted in water.
  • 1/4 cup Macapuno strings

Toppings

  • 1/2 cup Roasted coconut flakes
  • 2 tsp Sugar

Instructions
 

  • Prepare the IP with about 4 cups of water. Put the trivet and the cake pan brushed with coconut oil. Start preheating by starting with Saute setting to heat the water while preparing the mixture. While we all think that IP cook quickly, it takes time to pre-heat so this will cut that time.
  • On a large bowl, mix all dry ingredients. Add fresh milk and coconut milk. Mix until the mixture is smooth.
  • Divide the mixture into 3 equal parts. Transfer to 3 separate bowls.
  • For the first bowl add the ube halaya and mix well until smooth. Add to the cake pan.
  • Steam. Close the IP and move the setting to "STEAM". Start and this will take around 6 minutes cooking time. When done, QPR.
  • Meanwhile, prepare the second bowl by adding macapuno strings to the mixture. Mix well until well blended.
  • Pour carefully to the cake pan. Start IP and steam for another 6 minutes. When done, QPR.
  • Prepare the third bowl by adding pandan (water-pandan flavorings). Mix well until smooth.
  • Pour carefully to the cake pan. Start IP and steam for another 6 minutes. When done, QPR.
  • Let it cool and remove from pan. Transfer to the serving dish.
  • Mix the toppings and sprinkle generously on top. Serve and enjoy.
