Pancit Malabon

One of my favorite noodle recipe in the Philippines. It is closely related to palabok in which the noodles is served separate from the sauce. I cooked the sauce and integrate the noodles in the pan, then arrange in the serving plate to include, but not limited to the following add-ons – flaked smoked fish, crushed pork cracklings, green onions, parsley, fried garlic, hard boiled eggs, cooked shrimps and steamed napa cabbage.

Ingredients
  

  • 1 Pack Pancit Luglug noodles I uise the PuLi Rice Flour Noodles
  • 3 tbsp Vegetable oil
  • 5 cloves Crushed garlic
  • 1 medium Onions
  • 1 lbs Ground Pork
  • 1 pack Seafood medley
  • 1/2 lbs Shrimps
  • 1 tsp Achuete powder
  • 2 tbsp Fish sauce
  • 1 pack Palabok mix (To substitute the shrimp flavor.)
  • 6 cups Broth (chicken, beef or shrimp)
  • 1 can Cream of mushroom Others will add coconut milk to add more flavor.
  • Pepper and Salt

Toppings

  • 1 cup Steamed napa cabbage
  • 2 pcs Sliced hard boiled eggs
  • 2 tbsp Tinapa flakes
  • 2 tbsp Fried garlic flakes
  • 2 tbsp Crushed pork cracklings
  • 1 pcs Sliced lemon
  • 2 tbsp Green onions

Instructions
 

  • Soak the noodles with water for at least an hour.
  • Set IP in SAUTE setting and this will last for 30 minutes. Set again to SAUTE when it stopped and CANCEL when done cooking.
  • add oil and wait for about 3 minutes to heat. Add garlic and cook until brown. Add onions and continue cooking until translucent. Add the ground meat until brown.
  • Add condiments – salt, pepper and fish sauce to taste. Add seafood medley and shrimp. Leave for 5 minutes to cook. Add broth and let it simmer.
  • On a separate bowl mix 1/2 cup water with achuete powder and palabok mix until well blended. Add the mixture to the pan and add the cream of mushroom. Mix well and let it simmer. Adjust taste with fish sauce, salt or pepper according to your taste.
  • Drain the noodles and add to the pan. Let it simmer for about 10 minutes, constantly mix gently to avoid burning at the bottom. Set IP to CANCEL.
  • Transfer to the serving plate and top with the toppings and decorate for serving. Enjoy!
