IP Humba

This is another classic Filipino dish that is an all time favorite, very similar to adobo. My favorite version is with cut up pork hocks. Pork belly and whole pig hocks are also common alternatives.

Ingredients
  

  • 3 lbs pork hocks
  • 1/4 cup brown sugar
  • 1/4 cup dried banana blossoms
  • 1 tbsp cornstarch

Marinade

  • 1 whole minced garlic
  • 1/4 cup soy sauce
  • 1/4 cup apple cider vinegar
  • 2 tsp five spice powder
  • 2 tsp salt and pepper
  • 1 tbsp peanut oil
  • 1 star anise
  • 1 cinnamon stick
  • 2 bay leaves
  • green onions

Instructions
 

  • Mix all the marinade ingredients. Add to pork hocks. Mix thoroughly. Marinade for 4 hours or overnight.
  • Set the IP on "Stew". Transfer the meat and the marinade. Add brown sugar and banana blossoms. Mix and add 1/4 to 1/2 cup water to meet the minimum liquid IP requires to pressure cook. Press start and do NPR.
  • Transfer the meat to serving dish leaving the liquid in the pan.
  • Set IP to Saute to reduce the liquid.
  • Dilute cornstarch in water. Add to the pan continue to mix until the sauce is shiny. Pour it to the meat.
  • Garnish with green onions. Serve with freshly cooked steamed white rice.
