Peri-peri Rice
Perfect side for a peri peri chicken or any grilled dishes.
Peri-peri rice
Ingredients
- 2 Cups Basmati rice, washed
- 2 ears Garlic, minced
- 1 small Red onion, minced
- 1/2 cup Cherry tomatoes, halves
- 1/2 cup Green pepper, diced
- 1 tbsp Turmeric powder
- 1 tsp Cumin
- 1 tbsp Ginger powder
- 1 tbsp Smoked paprika
- 2 tbsp Olive Oil
- 1 tsp Ground pepper
- Salt
- 3 cups Chicken broth
- 3 tbsp Cilantro, chopped
- 2 tbsp Salted butter
Instructions
- Heat olive oil in a pan. Add garlic, onion and ginger together and let it cooked until mushy. Add tomatoes and green peppers.
- Add paprika, turmeric and pepper and let it cook for few in the oil to extract the flavors.
- Add rice and mix thoroughly. Cook for few minutes. Add salt and pepper.
- Add the broth, mix thoroughly to distribute the flavors evenly. Cook in low heat for 10 minutes. Do not stir.
- Add butter and cilatro and mix well. Serve with Peri peri chicken.
