Peri-peri Rice

Perfect side for a peri peri chicken or any grilled dishes.

Peri-peri rice

Ingredients
  

  • 2 Cups Basmati rice, washed
  • 2 ears Garlic, minced
  • 1 small Red onion, minced
  • 1/2 cup Cherry tomatoes, halves
  • 1/2 cup Green pepper, diced
  • 1 tbsp Turmeric powder
  • 1 tsp Cumin
  • 1 tbsp Ginger powder
  • 1 tbsp Smoked paprika
  • 2 tbsp Olive Oil
  • 1 tsp Ground pepper
  • Salt
  • 3 cups Chicken broth
  • 3 tbsp Cilantro, chopped
  • 2 tbsp Salted butter

Instructions
 

  • Heat olive oil in a pan. Add garlic, onion and ginger together and let it cooked until mushy. Add tomatoes and green peppers.
  • Add paprika, turmeric and pepper and let it cook for few in the oil to extract the flavors.
  • Add rice and mix thoroughly. Cook for few minutes. Add salt and pepper.
  • Add the broth, mix thoroughly to distribute the flavors evenly. Cook in low heat for 10 minutes. Do not stir.
  • Add butter and cilatro and mix well. Serve with Peri peri chicken.
