Fresh Spring Rolls (Vietnamese Style)

A light but filling meal or appetizer made of vermicelli noodles, salad mix and cooked shrimps wrapped with paper rice spring roll wrapper. Enjoy it with a flavorful peanut sauce or just the ordinary sweet and sour spring roll sauce.

Fresh Spring Roll (Vietnamese Style)

Ingredients
  

  • 8 pieces Rice springroll wrapper
  • Vermicelli bean or rice noodles
  • Lettuce salad mix
  • Cilantro
  • Green onions
  • Fresh mint
  • Fresh basil leaves
  • 15 pcs Boiled large shrimps (cut)

Sauce:

  • 1/4 cup Peanut butter
  • 1 tbsp Fish sauce
  • 1 tbsp Coconut milk
  • 3 tbsp Broth
  • 2 tbsp Chili sauce
  • 1 pcs Lime (juiced)
  • 1 tsp Minced garlic
  • Salt and pepper

Instructions
 

  • Boil water in a pan until water is rolling. Remove from heat and add the vermicelli noodle. Do not boil, just soak for 3-5 minutes until soft but not sticky.
  • Wet each rice wrapper quickly and lay in the plate or chopping board.
  • Arrange each ingredients to your liking – a little salad mix, vermicelli noodle, mint, cilantro, basil and green onions. Add 3-4 pieces of shrimps. Roll and wrap by pressing the fillings to fit everything inside and form a small log.
  • Mix all sauce ingredients until smooth.
  • Serve and enjoy as appetizer or a light meal.
