Chocolate Crinkles

One of my favorite Christmas cookies is a fudgy brownie cookie in the inside dusted with powdered sugar.

Chocolate Crinkles
Ingredients
- 1 cup Cocoa Powder (Hershey’s)
- 2 cups Granulated sugar
- 1/2 cup Vegetable oil
- 4 large Eggs
- 3 tsp Vanilla extract
- 2 cups All-purpose flour
- 2 tsp Baking powder
- 1 tsp Baking Soda
- 1 tsp Salt
- 1/2 cup Confectioner Sugar (for dusting)
Instructions
- Mix together the cocoa powder, sugar and oil until well blended in a mixing bowl. Add one egg at a time. Mix well and add the other egg. Continue beating until smooth.
- On a separate bowl, add flour, baking powder, baking soda and salt. Mix well.
- Pour vanilla extract and flour mixture into the liquid mixture. Mix until just blended. Do not overmix.
- Refrigerate the dough covered with saran wrap for at least 4 hours or overnight.
- When ready to bake, set the oven to 350 deg Celcius. Form the dough into small balls and roll each ball in powdered sugar to coat. Coat generously.
- Arrange each ball in a cookie sheet and bake for 10-12 minutes in the oven. The cookie will harden as it cools.
