Chocolate Crinkles

One of my favorite Christmas cookies is a fudgy brownie cookie in the inside dusted with powdered sugar.

Chocolate Crinkles

Ingredients
  

  • 1 cup Cocoa Powder (Hershey’s)
  • 2 cups Granulated sugar
  • 1/2 cup Vegetable oil
  • 4 large Eggs
  • 3 tsp Vanilla extract
  • 2 cups All-purpose flour
  • 2 tsp Baking powder
  • 1 tsp Baking Soda
  • 1 tsp Salt
  • 1/2 cup Confectioner Sugar (for dusting)

Method
 

  1. Mix together the cocoa powder, sugar and oil until well blended in a mixing bowl. Add one egg at a time. Mix well and add the other egg. Continue beating until smooth.
  2. On a separate bowl, add flour, baking powder, baking soda and salt. Mix well.
  3. Pour vanilla extract and flour mixture into the liquid mixture. Mix until just blended. Do not overmix.
  4. Refrigerate the dough covered with saran wrap for at least 4 hours or overnight.
  5. When ready to bake, set the oven to 350 deg Celcius. Form the dough into small balls and roll each ball in powdered sugar to coat. Coat generously.
  6. Arrange each ball in a cookie sheet and bake for 10-12 minutes in the oven. The cookie will harden as it cools.
