Pork Roast Adobo

It’s a great twist of having a roast and the familiar and satisfying taste of Filipino pork adobo. Or call it laziness on chopping down the meat to make the traditional adobo. Regardless, the recipe taste so good to get more excited for the leftover for the next meal or two. Yes, this is one of those recipes in which the meal gets tastier overnight.

Pork Roast Adobo

Traditional taste of adobo on a pork roast.

Ingredients
  

  • 1 whole Pork shoulder butt (about 4 lbs)
  • 6 Cloves Garlic
  • Salt and pepper
  • 3 tbsp Olive oil

Marinade

  • 8 Cloves Crushed garlic
  • 1/2 cup Soy sauce
  • 1/2 cup Vinegar
  • 3 tbsp Crushed black pepper
  • 4 tbsp Brown sugar
  • 1 tbsp Oyster Sauce (optional)
  • 1 cup Water

Instructions
 

  • Mix thoroughly all marinade ingredients on a bowl and set aside.
  • Crushed garlic together with salt and pepper. Rub thoroughly on the roast and set aside.
  • Using IP set on SAUTE, heat oil and brown each the sides of the roast. When done press CANCEL.
  • Add the marinade. Set the IP to PRESSURE COOK for 60 minutes. Do NPR.
  • Serve with the sauce. Enjoy with steamed rice.
