Braised Short Ribs

Ingredients
  

  • 3 lbs short ribs
  • 1/2 cup chopped onions
  • 1/2 cup crushed pineapple
  • 1 cup chopped potatoes
  • 1 cup chopped carrots
  • 1/4 cup olive oil

Marinade Sauce

  • 1/2 cup soy sauce
  • 1/2 cup pineapple juice
  • 1/4 cup sugar
  • 2 tsp five spice
  • 3 tsp salt and pepper
  • 1 clove minced garlic
  • 1/4 cup red wine

Instructions
 

  • Thoroughly clean the ribs and cut into pieces. Pat dry.
  • Mix all marinade sauce ingredients and add the meat. Refrigerate and let it sit for at least 4 hours.
  • Set IP in "Saute". Add olive oil and brown/fry meat, carrots and potatoes in different batches. Do not overcrowd the pan.
  • Saute onions and crushed pineapple slices. Add the meat, vegetables and the marinade sauce.
  • Set IP to pressure cook for 15 minutes. Leave at NPR for another 15 minutes. Transfer meat and vegetable pieces to a dish pan for serving.
  • Set IP back to Saute. Reduce the sauce to half. Dissolve cornstarch in cold water. Mix to the sauce and stir until thicken and shiny. Pour the sauce to the meat and vegetable dish.
  • Serve in freshly cooked steamed white rice and enjoy!
