Boil water in a pan until water is rolling. Remove from heat and add the vermicelli noodle. Do not boil, just soak for 3-5 minutes until soft but not sticky.
Wet each rice wrapper quickly and lay in the plate or chopping board.
Arrange each ingredients to your liking - a little salad mix, vermicelli noodle, mint, cilantro, basil and green onions. Add 3-4 pieces of shrimps. Roll and wrap by pressing the fillings to fit everything inside and form a small log.
Mix all sauce ingredients until smooth.
Serve and enjoy as appetizer or a light meal.
