Peri-peri rice

Ingredients
  

  • 2 Cups Basmati rice, washed
  • 2 ears Garlic, minced
  • 1 small Red onion, minced
  • 1/2 cup Cherry tomatoes, halves
  • 1/2 cup Green pepper, diced
  • 1 tbsp Turmeric powder
  • 1 tsp Cumin
  • 1 tbsp Ginger powder
  • 1 tbsp Smoked paprika
  • 2 tbsp Olive Oil
  • 1 tsp Ground pepper
  • Salt
  • 3 cups Chicken broth
  • 3 tbsp Cilantro, chopped
  • 2 tbsp Salted butter

Method
 

  1. Heat olive oil in a pan. Add garlic, onion and ginger together and let it cooked until mushy. Add tomatoes and green peppers.
  2. Add paprika, turmeric and pepper and let it cook for few in the oil to extract the flavors.
  3. Add rice and mix thoroughly. Cook for few minutes. Add salt and pepper.
  4. Add the broth, mix thoroughly to distribute the flavors evenly. Cook in low heat for 10 minutes. Do not stir.
  5. Add butter and cilatro and mix well. Serve with Peri peri chicken.
