Ube Pandesal (Bread Machine)

This is a variation to the bread machine pandesal recipe with an added flavor of ube and cheese stuffing.

Ingredients

  • 1/4 cup evaporated milk
  • 1/2 cup fresh milk
  • 1/2 cup warm water
  • 5 tbsp butter at room temperature
  • 1 tbsp canola oil or vegetable oil
  • 1 large egg
  • 1 tsp ube extract
  • 3 1/2 cups all purpose flour
  • 1 tsp salt
  • 1 cup grated ube
  • 1/2 cup granulated sugar
  • 3 tbsp rapid rise yeast or 1 packet yeast
  • bread crumbs
  • 4 Oz cream cheese
  • 1 Tbsp Honey

Equipment

  • bread machine
  • cookie sheet

Method

  1. Mix the ingredients based on your bread machine instruction. I added everything in the bread machine pan based on the order it is listed, except for the bread crumbs.
  2. For the yeast, carve a hole at the middle of the flour mixture without touching the liquid and pour the yeast.
  3. Set the bread machine to dough setting
  4. Remove the dough from the bread machine. Divide into 3 parts. Roll each part into a log and divide each log into 10 pieces.
  5. Mix cream cheese and honey in a small bowl for the fillings.
  6. Use a rolling pin to flatten each piece and wrap a dollop of cream cheese mixture like a dumpling.
  7. Arrange in a cookie sheet and let it rise for at least 30 minutes.
  8. Bake for 18-20 minutes on a preheated 350deg F oven. Serve with your favorite coffee and it's bests while it's warm.
