Ingredients
  

  • 7 cups thinly sliced pealed apples
  • 1/2 cup brown sugar
  • 1/2 cup white sugar
  • 1 tsp cinnamon
  • 1 tsp pumpkin spice
  • 1/2 tsp nutmeg
  • 3 tbsp all-purpose flour
  • 1 piece lemon (juice)
  • 2 tbsp butter (cubed)
  • 1 large egg white
  • 1 package pie pastry

Method
 

  1. Preheat oven to 375 degrees Fahrenheit. Toss apples slices and lemon juice to keep it becoming brown.
  2. Mix both sugars, flour, cinnamon, nutmeg and pumpkin spice.
  3. Pour the mixture (retain 2 tbsp) into the apple slices.
  4. Lay the pastry dough in a nine inch pie plate and pour the mixture. Top butter cubes. Cover with another pastry. I use the weaved pastry style.
  5. Beat the egg white until foamy. Generously coat the pie pastry. Sprinkle the remaining sugar mixture on top.
  6. Loosely cover with aluminum foil and bake for 40 minutes. Remove the cover and bake for 20 more minutes.
